In the vineyard, we use only copper and sulfur according to the principles of organic farming, limiting our interventions to pruning alone, which is done by hand, as is the harvest, which takes place in crates.

The Wine Cellar

Sustainable Production

In winemaking, we try to intervene as little as possible, limiting the use of oenological products to just sulfur dioxide, when possible. The grapes are carefully hand-selected and vinified separately based on the potential of each parcel. Cellar operations, from racking to bottling, are performed in a minimally invasive manner, often without the use of pumps, and following the lunar phases.

The vineyard on Sciobaco Street

The vineyard, located on Sciobaco Street, benefits from a terroir characterized by the influence of the sea, the surrounding mountains, and excellent temperature variations. These conditions, combined with the sustainable agricultural practices we employ, such as the use of compost or the planting of cover crops, allow us to bring grapes to the winery that are suitable for the production of high-quality wines.
